Menu changes are the first stage of the transformation with Cardello doing much of his shopping at the Kings Park Farmers Market for menu inspiration and fresh foods. Patrons can expect to see menu specials based on in season choices at the market and a farm-to-table approach.

We are using products from the farmers market like lettuce and tomatoes, local caught tuna and swordfish. Shopping there is well worth it,” he said.

Cardello says while he wants the restaurant to be known for a solid breakfast he wants customers to consider them a place for dinner, not just an afterthought.

“Food will be identifiable and classic. We are trying to carve out our own identity,”
